Notes
Jerusalem artichoke (Helianthus tuberosus) is a perennial for food gardens, borders, and pollinator gardens. It is hardy to USDA zone 3, or down to -40°F (-40°C). This plant likes full or part sun and dry to moist soil of most types. It is grown for its edible tubers, which taste sweet and nutty when eaten raw and are also good boiled or roasted. Plants spread fast by rhizomes, so give them room. Deer rarely make it their first choice.
Pairs well with Indian Summer rudbeckia, Staghorn sumac, and Garlic chives.
